Around Kitchener and Waterloo cabbage and mushroom can be found locally grown all year. In the winter it is cabbage that was grown in the fall and has been stored. The rest of the year it’s totally way fresh. Either way, cabbage is a wonderful vegetable with many uses. We ate this as a meal last week and loved it, it was even great as leftovers (maybe even better for some reason!). I shared my version of the recipe on Bailey’s Local Foods’ blog so check it out!
