HI. I never knew you could bottle (can) homemade soup. Do you HAVE to use the pressure cooker or are you able to just use the “Over flow” Method ? I’ve never seen a home pressure cooker this size here in New Zealand

Yes, you have to pressure can it. It’s the only method that ensures temperatures above boiling. I’m not sure in NZ whether you can find this size of pressure canner, it might need to be ordered from somewhere else. Otherwise the easy alternative for preserving soup is to just freeze it. For me I like the convenience of grabbing the soup and having it ready to go without having to thaw it. Good luck!
